How to Cook the Best Beef Wagyu
I think we can all agree that it’s a sin to overcook a prime piece of Wagyu. Because of Wagyu’s intense marbling, its fat is evenly and generously distributed throughout the meat unlike other cuts. That’s why it’s one of the most well-known prime cuts of beef in the world, but that’s also why cooking can ruin its incredible tenderness if not done right. Here’s our tips on how to prepare and cook the best beef Wagyu to bring out its world-renowned flavor.
Thaw it Properly
Cooking Wagyu requires proper preparation and some patience. Because we send our meat flash frozen to maintain peak freshness and flavor, you’ll need to defrost it in the fridge. It can take 24-48 hours depending on the cut, but good things come to those who wait! After your meat has defrosted and you’re ready to get cooking, remove the Wagyu from the fridge and allow it to hit room temperature before cooking (it shouldn’t take more than an hour). This ensures that your Wagyu cooks more evenly than it would with a colder center. To make the best beef Wagyu, you’ll want to make sure it’s not too cold so that the fat melts consistently throughout the entire cut of meat.
Keep your Seasoning Simple
We’ll bet that you’re going to be amazed by the incredible flavor that is naturally packed into this meat, especially if you’re a Wagyu first-timer. In order to cook the best beef Wagyu and bring out these natural flavors, we recommend sticking to the tried and true salt and pepper combo. You definitely don’t want to overpower its hearty taste and season it like a batch of fajitas.
Avoid a Traditional Grated Grill
As much as we love to cook using our American grills, Wagyu calls for special treatment. You need to use a pan or grill plate for a flat cooking surface to collect the juices and cook evenly. With traditional grills, much of the delicious fat content, and flavor, can be lost as those fat juices drip through the grates. With a flat cooking surface, that fat will begin to pool around the meat to create a crispy crust on the outside and give you soft and tender meat on the inside.
